Paul Woodham was suggesting Friday on the basis (I think) that tomorrow was looking iffy (it is). My potential diversion this week is an impending (and now overdue) grandson, so happy to go for Friday, subject to potential cancellation for me - but at least there may be at least two despite that.
Just realised what I said - "grandson" - since we don't know the sex does that imply sexist bias? (You don't have to answer that).

I had in mind something more proactive. This week for example it was obvious (even allowing for the inaccuracies of weather forecasting) that Wednesday would be a washout. Ride leaders were obviously unlikely to be coming forward. In those circumstances the ride day could be changed. This would be posted on the front timetable and would have more visibility than this forum.
There is nothing to stop others proposing other (additional) days as Paul W often does too. This doesn't always get many takers - which, as you imply, could be due to the lack of visibility of the forum.

As rides are quite often, as today, not run or are poorly attended because of wet weather, would making the ride day more flexible allow more rides to go ahead?
So, for example, the midweek ride could normally be on Wednesday as now, but if (in advance) it was pretty obvious this was going to be wet then the ride could be moved to Tuesday or Thursday.
You could do that with the Sunday ride too, and have it on a Saturday.
An added advantage might be that those who have other activities that prevent them coming on a Wednesday or Sunday would be able to attend.

I notice that no-one (including me) has actually answered the question of why more people aren't trying the step up rides. I think part of the issue might be the length/difficulty of the step up ride itself. Even if you are quite comfortable with (say) a fairly flat 40mile ride at 16mph, you might still be unwilling to risk a 50+mile ride which is a bit hilly, and will probably be going at 16.5+ - so I think the route chosen should be perhaps a bit less taxing than is the norm.
Even those who don't think they can go in the faster group on a regular basis might welcome the opportunity to push themselves a bit harder than normal occasionally. -

It seems to me that at the weekends there are a fair number ok with 16-17, but no more. The leisure group actually rarely goes the published 11-13 but is normally 14-15.5. Midweek there are only occasionally enough for 2 rides and again , whatever the nominal ride category is, the speed is mostly 14-15.5.
Whatever boundaries you set there will be a fair number of people not best suited - I'm not convinced that a 16.5-17.5 fast classification will help, unless you create slower categories each covering a 1mph increment.
And there still needs to be a genuine slower category for those new to the club.
There clearly aren't enough club members to support 4 or 5 categories on a regular basis - but I think there is a case for more categories - but some only run once or twice a month.

I'm not sure I deserve one. It was a mate of mine who actually suggested him. I then found a picture of him in Ferrari No 12 so that confirmed it ... but pineapple if you insist!
